- 2.5–3 lbs Russet or Yukon Gold Potatoes
- 1/2 cup (120ml) Freshly Squeezed Lemon Juice
- 1/2 cup (120ml) Good Quality Extra Virgin Olive Oil
- 4–6 cloves Garlic, minced
- 2 tablespoons Dried Oregano
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 cup (120ml) Vegetable or Chicken Broth
- Fresh Parsley or Oregano, for garnish (optional)
Instructions
- Wash and Prep the Potatoes: Scrub the potatoes clean under running water and cut into 1-1.5 inch wedges.
- Soak the Potatoes: Place cut potatoes in a bowl filled with cold water for 30-60 minutes.
- Preheat the Oven: Set oven to 400°F (200°C).
- Make the Marinade: Whisk together lemon juice, olive oil, minced garlic, oregano, salt, and pepper in a large bowl.
- Coat the Potatoes: Toss the dried potato pieces in the marinade until evenly coated.
- Arrange for Roasting: Spread the marinated potatoes on a baking sheet in a single layer.
- Roast: Place in the oven and roast for 20-25 minutes.
- Flip and Add Broth: Flip the potatoes and pour broth around them.
- Finish Roasting: Roast for an additional 25-35 minutes, flipping every 10-15 minutes.
- Rest and Garnish: Let the potatoes rest for 5-10 minutes and garnish with herbs.
Notes
Make-ahead tips: Potatoes can be prepped and marinated a few hours in advance. For extra crunch, raise the oven temperature to 425°F (220°C) for the last few minutes.
