Description

Delight in the crispy, golden texture of these Authentic Greek Potatoes, infused with lemon and herbs for a perfect side dish.


Ingredients

  • 2.53 lbs Russet or Yukon Gold Potatoes
  • 1/2 cup (120ml) Freshly Squeezed Lemon Juice
  • 1/2 cup (120ml) Good Quality Extra Virgin Olive Oil
  • 46 cloves Garlic, minced
  • 2 tablespoons Dried Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup (120ml) Vegetable or Chicken Broth
  • Fresh Parsley or Oregano, for garnish (optional)

Instructions

  1. Wash and Prep the Potatoes: Scrub the potatoes clean under running water and cut into 1-1.5 inch wedges.
  2. Soak the Potatoes: Place cut potatoes in a bowl filled with cold water for 30-60 minutes.
  3. Preheat the Oven: Set oven to 400°F (200°C).
  4. Make the Marinade: Whisk together lemon juice, olive oil, minced garlic, oregano, salt, and pepper in a large bowl.
  5. Coat the Potatoes: Toss the dried potato pieces in the marinade until evenly coated.
  6. Arrange for Roasting: Spread the marinated potatoes on a baking sheet in a single layer.
  7. Roast: Place in the oven and roast for 20-25 minutes.
  8. Flip and Add Broth: Flip the potatoes and pour broth around them.
  9. Finish Roasting: Roast for an additional 25-35 minutes, flipping every 10-15 minutes.
  10. Rest and Garnish: Let the potatoes rest for 5-10 minutes and garnish with herbs.

Notes

Make-ahead tips: Potatoes can be prepped and marinated a few hours in advance. For extra crunch, raise the oven temperature to 425°F (220°C) for the last few minutes.
