Description

A vibrant and crunchy salad with fresh broccoli, crispy bacon, and a creamy dressing, perfect for any occasion.


Ingredients

  • 1011 strips bacon (cooked, crispy)
  • 2 heads broccoli (about 1 and 1/2 pounds or 56 cups, chopped)
  • 1 cup dried cranberries
  • 1/3 cup sunflower seeds (roasted and salted)
  • 1 cup cheddar cheese (shredded)
  • 1/3 cup chopped red onion
  • 1 & 1/4 cups Miracle Whip or mayonnaise
  • 1 lemon (zest and juice)
  • 2 tablespoons white wine vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Cook the bacon in the oven at 400°F (200°C) for 15-20 minutes until crispy.
  2. Mix up the dressing by combining Miracle Whip, lemon zest, lemon juice, white wine vinegar, sugar, kosher salt, black pepper, dry mustard, and cayenne pepper in a large bowl. Whisk until smooth.
  3. Chop the broccoli into small florets.
  4. Combine the chopped broccoli with the dressing in the bowl.
  5. Add cranberries, sunflower seeds, shredded cheddar cheese, chopped red onion, and most of the bacon (reserve some for topping).
  6. Toss all ingredients together until the broccoli is coated with dressing.
  7. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

You can prepare ingredients in advance and store them separately until ready to toss.
