- 1 tbsp Cajun seasoning (adjust to taste)

- 1 cup diced onions

- 1.5 cups orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup Parmesan cheese (grated)
- Salt and Pepper (to taste)
- Fresh parsley (for garnish, optional)
Instructions
- Warm the oil in a large pot over medium heat until it shimmers.
- Sauté the chicken, seasoning with Cajun seasoning, salt, and pepper. Cook until golden brown, about 5-7 minutes.
- Set the chicken aside, leaving flavorful bits in the pot.
- Sauté the onions and garlic in the same pot until fragrant, about 2-3 minutes.
- Stir in the bell pepper if using, cooking for another minute until slightly softened.
- Mix in the orzo, chicken broth, and heavy cream; bring to a gentle boil.
- Simmer on low, covered, for 10-12 minutes until orzo is tender, stirring occasionally.
- Finish by stirring in the cooked chicken and grated Parmesan until melted and creamy.
- Serve in bowls, garnished with fresh parsley if desired.
Notes
Pre-chop vegetables for easier cooking. Store leftovers in an airtight container for up to three days. Reheat gently with added broth for creaminess.
