Description

A refreshing salad featuring crisp carrots and sweet apples, enhanced with a creamy dressing.


Ingredients

  • 2 cups grated carrots
  • 2 cups diced apples
  • 1/4 cup raisins (optional)
  • 1/4 cup chopped walnuts (optional)
  • 1/2 cup plain yogurt or mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: In a large bowl, combine the grated carrots and diced apples. Add optional raisins and walnuts if desired.
  2. Make the Dressing: In a separate bowl, whisk together the yogurt (or mayonnaise), honey, and lemon juice until smooth. Season with salt and pepper.
  3. Combine Everything: Pour the dressing over the salad mixture and gently toss until well-coated.
  4. Serve it Up: Cover and refrigerate for about 30 minutes. Serve chilled.

Notes

For a vegan version, substitute yogurt with plant-based yogurt and honey with maple syrup. Add walnuts just before serving to maintain their crunch.
