- 2 cups diced apples
- 1/4 cup raisins (optional)
- 1/4 cup chopped walnuts (optional)
- 1/2 cup plain yogurt or mayonnaise
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: In a large bowl, combine the grated carrots and diced apples. Add optional raisins and walnuts if desired.
- Make the Dressing: In a separate bowl, whisk together the yogurt (or mayonnaise), honey, and lemon juice until smooth. Season with salt and pepper.
- Combine Everything: Pour the dressing over the salad mixture and gently toss until well-coated.
- Serve it Up: Cover and refrigerate for about 30 minutes. Serve chilled.
Notes
For a vegan version, substitute yogurt with plant-based yogurt and honey with maple syrup. Add walnuts just before serving to maintain their crunch.
