- 2 slices of whole grain or sourdough bread
- 1 grilled chicken breast, sliced
- 1 ripe avocado, mashed
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- Butter for spreading
Instructions
- Preheat your skillet over medium heat for an even cooking surface.
- Spread butter on one side of each slice of bread.
- On the unbuttered side of one bread slice, generously spread the mashed avocado and sprinkle with salt and pepper.
- Layer the sliced grilled chicken evenly on top of the avocado.
- Sprinkle the shredded cheese over the chicken.
- Top with the other slice of bread, buttered side up.
- Place the sandwich in the preheated skillet and cook until golden brown, about 3-4 minutes; then flip and cook until the other side is crisp and the cheese is melted.
- Remove from the skillet, slice in half, and serve warm.
