- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 cup melted dark chocolate
- 1 cup fresh strawberries, pureed
- ¼ cup granulated sugar (for strawberry swirl)
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Combine chocolate cookie crumbs, melted butter, and sugar in a mixing bowl. Press into a greased springform pan and bake for 10 minutes.
- Beat the softened cream cheese until smooth. Gradually add sugar and mix. Beat in eggs one at a time.
- Stir in sour cream and melted dark chocolate until luxurious and velvety.
- Whisk together strawberry puree, additional sugar, and lemon juice in a separate bowl.
- Pour the chocolate filling over the cooled crust and dollop strawberry puree on top. Use a knife to swirl.
- Bake for 50-60 minutes until edges are set with a slight jiggle in the center.
- Cool in the oven for 1 hour with the door ajar, then refrigerate for at least 4 hours or overnight.
Notes
Make-ahead tips: Cheesecake can be prepared a day in advance. Avoid overmixing and rapid cooling to prevent cracks.
