- 2 packs of ramen noodles
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 2 green onions, sliced
- 1 cup mushrooms, sliced
- Toppings of your choice (soft-boiled eggs, pickled daikon, seaweed, chili oil)
Instructions
- Combine the broth, heavy cream, soy sauce, miso paste, garlic, and ginger in a large pot. Bring to a gentle simmer over medium heat.
- Add the ramen noodles to the pot and cook according to package instructions, usually about 3-4 minutes.
- Stir in the sliced mushrooms and green onions, cooking for an additional minute.
- Serve in bowls and add your favorite toppings to enjoy.
Notes
You can prepare the broth ahead of time and store it in the fridge for up to three days. Reheat and add fresh noodles and toppings before serving.
