- 4 large potatoes (Russet or Yukon Gold)
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Toppings: sour cream, sliced chives, shredded cheese, bacon bits
Instructions
- Preheat your oven to 400°F (200°C).
- Grate the potatoes using a box grater or food processor and soak them in cold water for 10 minutes.
- Drain the potatoes in a colander and dry them thoroughly using a kitchen towel.
- Mix the drained, dried grated potatoes with Parmesan cheese, egg, salt, and pepper in a bowl.
- Grease a muffin tin generously and divide the potato mixture into the muffin cups, shaping them into nests.
- Bake for 25-30 minutes or until golden brown and crispy.
- Remove from the oven and cool slightly before popping them out of the muffin tin.
- Fill your nests with your favorite toppings and serve warm.
