- 1 cucumber
- 2 cups strawberries
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh mint
Instructions
- Wash the cucumber thoroughly under cold running water.
- Slice the cucumber into thin rounds, about 1/8-inch thick, and place in a large mixing bowl.
- Rinse the strawberries under cool water and pat dry.
- Hull the strawberries by cutting off the green tops and slice into thin slices, adding to the bowl with cucumber.
- In a small bowl, combine olive oil, balsamic vinegar, and honey. Whisk until honey dissolves.
- Season the dressing with salt and black pepper, and whisk again.
- Pour the dressing over the cucumber and strawberry slices in the mixing bowl.
- Wash and slice the fresh mint into thin ribbons and add to the salad.
- Toss everything together to evenly distribute the mint.
- Taste the salad and adjust the seasoning if needed.
- Allow the salad to sit for 5 to 10 minutes to meld flavors before serving.
Notes
