Description

A refreshing salad featuring juicy strawberries and crisp cucumbers, perfectly complemented by a tangy balsamic dressing and aromatic mint.


Ingredients

  • 1 cucumber
  • 2 cups strawberries
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh mint

Instructions

  1. Wash the cucumber thoroughly under cold running water.
  2. Slice the cucumber into thin rounds, about 1/8-inch thick, and place in a large mixing bowl.
  3. Rinse the strawberries under cool water and pat dry.
  4. Hull the strawberries by cutting off the green tops and slice into thin slices, adding to the bowl with cucumber.
  5. In a small bowl, combine olive oil, balsamic vinegar, and honey. Whisk until honey dissolves.
  6. Season the dressing with salt and black pepper, and whisk again.
  7. Pour the dressing over the cucumber and strawberry slices in the mixing bowl.
  8. Wash and slice the fresh mint into thin ribbons and add to the salad.
  9. Toss everything together to evenly distribute the mint.
  10. Taste the salad and adjust the seasoning if needed.
  11. Allow the salad to sit for 5 to 10 minutes to meld flavors before serving.

Notes

Best enjoyed fresh. For meal prep, store veggies and dressing separately until ready to serve.
