Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, mix crushed chocolate cookies with melted butter until well combined. Press into the base of a springform pan.
- In a large bowl, beat softened cream cheese with sugar, melted chocolate, and vanilla extract until smooth.
- Add eggs one at a time, mixing well after each addition.
- Gently fold in fresh raspberries.
- Pour the cheesecake batter over the crust and smooth the top.
- Bake for about 60 minutes, or until the center is set but slightly jiggly.
- Cool on a wire rack, then refrigerate for several hours or overnight.
