- 4 boneless, skinless chicken breasts
- 1 cup Honey BBQ sauce
- 2 pounds potatoes, diced
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side, brushing with Honey BBQ sauce during the last few minutes.
- Boil diced potatoes in a large pot until tender, about 10-15 minutes. Drain and return them to the pot.
- Add olive oil, minced garlic, cheddar cheese, and Parmesan cheese to the potatoes; mix well until the cheese melts.
- Serve the grilled chicken next to the cheesy garlic Parmesan potatoes, garnishing with fresh parsley if desired.
Notes
Marinate chicken in sauce a few hours or overnight for deeper flavors. Use air fryer as a quicker cooking method.
