Description

  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon minced garlic
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes
  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeño pepper (thinly sliced)

Instructions

  1. Prepare the Peach Glaze: In a medium bowl, combine the peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix until well combined and set aside.
  2. Season the Chicken: Pat the chicken thighs dry with a paper towel. In a small bowl, combine the salt, black pepper, and chili powder. Rub this seasoning mixture all over the chicken, ensuring even coverage.
  3. Cook the Chicken: Heat a large nonstick skillet over medium heat and add 2 tablespoons of olive oil. Once hot, place the seasoned chicken thighs in the skillet. Sear for 5 minutes, then flip the chicken. Reduce the heat to medium-low and cook for an additional 5 minutes, or until the internal temperature reaches 165°F. Remove from heat and transfer to a plate, tenting with foil to keep warm.
  4. Sauté the Vegetables: To the same skillet, increase the heat back to medium. Add the sliced jalapeño peppers and sauté for about 3 minutes. Then, add the peaches and continue cooking for another 3 minutes, or until the peaches soften and release their juices.
  5. Combine and Finish Cooking: Pour the peach glaze over the jalapeños and peaches in the skillet, stirring to ensure everything is well-coated. Return the chicken to the skillet, spooning glaze over the top, and cook for 1-2 more minutes, or until the chicken is heated through.
  6. Serve Warm: Plate up the chicken with the peach and jalapeño mixture generously served over the top.

Notes

For extra depth of flavor, consider briefly marinating the chicken in the glaze before cooking. Use firm, ripe peaches for the best sweetness.
