Ingredients

- 2 English cucumbers, thinly sliced
- 1 cup fresh mozzarella cheese, torn into pieces
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil leaves, torn
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Slice the cucumbers and arrange them on a serving platter.
- Halve the cherry tomatoes and scatter them over the cucumber slices.
- Tear the fresh mozzarella into bite-sized pieces and add to the salad.
- Tear the fresh basil leaves and sprinkle over the top.
- Drizzle with olive oil and balsamic vinegar.
- Season with salt and pepper to taste.
- Serve immediately and enjoy!
