- 4 boneless, skinless chicken breasts
- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 1/4 cup lime juice
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a mixing bowl, whisk together the lime juice, olive oil, cumin, garlic powder, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).
- Remove the chicken from the grill and let it rest for a few minutes.
- Slice the avocados and arrange them on top of the grilled chicken, then add halved cherry tomatoes.
- Garnish with fresh cilantro before serving.
