Description

A vibrant grilled chicken dish infused with the creamy richness of avocados, tangy lime, and sweet cherry tomatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1/4 cup lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a mixing bowl, whisk together the lime juice, olive oil, cumin, garlic powder, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).
  5. Remove the chicken from the grill and let it rest for a few minutes.
