Description

A vibrant pasta salad featuring grilled corn, cherry tomatoes, creamy avocado, and a zesty lime dressing, perfect for summer gatherings.


Ingredients

  • 2 cups cooked pasta (such as rotini or penne)
  • 1 cup fresh corn (grilled or boiled)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, toss the cooked pasta, fresh corn, halved cherry tomatoes, chopped red onion, and cilantro together.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.
