- 1 lb kielbasa sausage, sliced into half-moons
- 4 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups whole milk
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons flour (optional, for thickening)
- Fresh parsley for garnish (optional)
Instructions
- Sauté the Kielbasa: In a large pot or Dutch oven, heat olive oil over medium heat. Add the sliced kielbasa sausage and cook until nicely browned, about 5-7 minutes. Remove from the pot and set aside.
- Cook the Aromatics: In the same pot, toss in the chopped onion and minced garlic. Sauté for 3-4 minutes.
- Add the Potatoes and Broth: Stir in the diced potatoes, then pour in the chicken broth. Bring to a boil, then reduce heat and let it simmer for 10-15 minutes.
- Thicken the Soup (if desired): Whisk together the flour and milk until smooth, then slowly pour into the soup while stirring. Incorporate heavy cream and let it simmer for another 5-10 minutes.
- Finish with Kielbasa and Seasoning: Stir the browned kielbasa back into the pot, add thyme, salt, and pepper. Allow to simmer for an additional 5 minutes.
- Serve: Ladle the soup into bowls, garnishing with fresh parsley, if desired.
Notes
This soup can be made ahead and stores well in the fridge. Consider adding extra veggies like carrots or celery for variation.
