Description

This Loaded Potato Salad features creamy potatoes, crispy bacon, and fresh green onions, making it the perfect side dish for gatherings and celebrations.


Ingredients

  • 3 large potatoes
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 6 slices of bacon, cooked and crumbled
  • 3 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Allow them to cool, then dice into cubes.
  2. Create the base by combining sour cream, mayonnaise, salt, and pepper in a large mixing bowl. Mix until smooth and creamy.
  3. Combine the diced potatoes, shredded cheddar cheese, crumbled bacon, and chopped green onions. Gently fold them in.
  4. Taste and adjust seasoning with more salt and pepper, if necessary.
