Description

A creamy and flavorful potato salad loaded with crispy bacon, crunchy green onions, and rich cheddar cheese, perfect for summer gatherings and barbecues.


Ingredients

  • 2 pounds potatoes (russet or Yukon gold)
  • 6 slices cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and let cool.
  2. Cube the cooled potatoes and place them into a mixing bowl.
  3. Prepare the dressing by whisking together sour cream, mayonnaise, salt, and pepper until smooth.
  4. Combine the dressing with the cubed potatoes, mixing until coated.
  5. Add in crumbled bacon, shredded cheese, and green onions; fold gently.
  6. Chill in the refrigerator for at least 1 hour before serving.
