Description

A satisfying and indulgent taco bowl featuring crispy roasted potatoes, flavorful ground meat, fresh veggies, and creamy avocado.


Ingredients

  • 2 large potatoes, diced
  • 1 lb ground beef or turkey (or plant-based substitute)
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (rinsed and drained)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (diced)
  • 1 cup shredded lettuce
  • 1 tablespoon taco seasoning
  • Olive oil, salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes in olive oil, salt, and pepper. Spread evenly on a baking sheet.
  3. Bake for 25-30 minutes, turning halfway through until golden and crunchy.
  4. In a skillet, cook the ground meat over medium heat. Stir in taco seasoning.
  5. In a bowl, combine the roasted potatoes, cooked meat, corn, black beans, cherry tomatoes, diced avocado, and shredded lettuce. Toss gently.
  6. Serve in bowls with extra toppings like sour cream or cilantro.

Notes

Make-ahead tips: Prepare the baked potatoes in advance and store in an airtight container. Use an air fryer for quicker potato preparation.
