Description

Delicious low carb wraps filled with cheesy garlic chicken, perfect for a satisfying weeknight dinner.


Ingredients

  • 2 cups cooked chicken breast (shredded, or use rotisserie chicken)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic (minced)
  • 1/4 cup cream cheese (softened)
  • 1 tablespoon olive oil
  • 4 large low-carb tortillas or wraps
  • 1 tablespoon fresh parsley (chopped)
  • Salt and pepper (to taste)
  • 1 handful baby spinach (optional)

Instructions

  1. Preheat a skillet or grill pan over medium heat, adding olive oil.
  2. Microwave the tortillas for 10-15 seconds covered with a damp paper towel to soften.
  3. In a mixing bowl, combine shredded chicken, mozzarella, cheddar, cream cheese, minced garlic, parsley, salt, and pepper. Mix thoroughly.
  4. Divide the filling among the tortillas, roll tightly, and tuck in the sides.
  5. Cook the wraps seam-side down in the skillet for 2-3 minutes on each side until golden brown and cheese is melted.
  6. Remove from skillet, slice, and garnish with extra parsley.

Notes

For a spicier version, add diced jalapeños. Can be made with turkey or vegetables for variety.
