- 1½ lbs (680g) boneless, skinless chicken breasts or thighs
- 3 tablespoons olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- Salt and black pepper, to taste
- 1 cup Greek yogurt
- ½ cup crumbled feta cheese
- ½ medium cucumber, grated and drained
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh dill or mint, chopped
- Salt and pepper, to taste
- 4 pita or flatbreads, warmed
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 cup shredded lettuce or baby spinach
- ½ cup sliced cucumber
- Extra crumbled feta (optional)
Instructions
- Whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper in a bowl. Submerge the chicken in the marinade and allow it to marinate for at least 20 minutes or up to four hours.
- Heat a skillet or grill pan over medium-high heat and cook the marinated chicken for 5-6 minutes per side until cooked through. Let it rest for 5 minutes before slicing.
- In another bowl, combine Greek yogurt, crumbled feta, grated cucumber, lemon juice, minced garlic, olive oil, and dill or mint. Stir until smooth and creamy.
- Spread tzatziki on warmed pita, layer with chicken, tomatoes, cucumber, onion, and lettuce. Drizzle with more tzatziki and sprinkle extra feta if desired.
- Fold the pita and serve immediately, optionally with fresh lemon wedges.
Notes
For best flavor, marinate the chicken overnight. You can replace Greek yogurt with sour cream if preferred.
