Description

A delightful journey of flavors combining marinated chicken, fresh vegetables, and creamy feta tzatziki wrapped in warm pita.


Ingredients

  • lbs (680g) boneless, skinless chicken breasts or thighs
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 1 cup Greek yogurt
  • ½ cup crumbled feta cheese
  • ½ medium cucumber, grated and drained
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill or mint, chopped
  • Salt and pepper, to taste
  • 4 pita or flatbreads, warmed
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 cup shredded lettuce or baby spinach
  • ½ cup sliced cucumber
  • Extra crumbled feta (optional)

Instructions

  1. Whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper in a bowl. Submerge the chicken in the marinade and allow it to marinate for at least 20 minutes or up to four hours.
  2. Heat a skillet or grill pan over medium-high heat and cook the marinated chicken for 5-6 minutes per side until cooked through. Let it rest for 5 minutes before slicing.
  3. In another bowl, combine Greek yogurt, crumbled feta, grated cucumber, lemon juice, minced garlic, olive oil, and dill or mint. Stir until smooth and creamy.
  4. Spread tzatziki on warmed pita, layer with chicken, tomatoes, cucumber, onion, and lettuce. Drizzle with more tzatziki and sprinkle extra feta if desired.
  5. Fold the pita and serve immediately, optionally with fresh lemon wedges.

Notes

For best flavor, marinate the chicken overnight. You can replace Greek yogurt with sour cream if preferred.
