- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
Instructions
- Season chicken generously with salt, pepper, and garlic powder. Sear in a large skillet over medium heat for about 5 minutes on each side until golden brown.
- Whisk together BBQ sauce and honey in a small bowl until combined.
- Pour the honey BBQ mixture over the chicken, ensuring it is well-coated. Add uncooked rice and pour in chicken broth, stirring to submerge the rice.
- Bring to a simmer, reduce heat to low, cover with a lid, and cook for about 20 minutes until rice is tender.
- In the last 5 minutes of cooking, scatter mixed vegetables on top, cover again to steam them.
- Let sit for 5 minutes before fluffing the rice gently and serving hot.
Notes
