Description

A comforting one-pan meal featuring tender chicken, fluffy rice, and a sweet and tangy honey BBQ sauce, perfect for family gatherings.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season chicken generously with salt, pepper, and garlic powder. Sear in a large skillet over medium heat for about 5 minutes on each side until golden brown.
  2. Whisk together BBQ sauce and honey in a small bowl until combined.
  3. Pour the honey BBQ mixture over the chicken, ensuring it is well-coated. Add uncooked rice and pour in chicken broth, stirring to submerge the rice.
  4. Bring to a simmer, reduce heat to low, cover with a lid, and cook for about 20 minutes until rice is tender.
  5. In the last 5 minutes of cooking, scatter mixed vegetables on top, cover again to steam them.
  6. Let sit for 5 minutes before fluffing the rice gently and serving hot.

Notes

Best served with garlic bread, a simple green salad, or coleslaw. Customize by adding more vegetables or different proteins.
