Description

Delightful Rhubarb Cream Cheese Bars offer a balance of tangy rhubarb and creamy filling, perfect for gatherings or a relaxing afternoon.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 1/2 cup cream cheese, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups rhubarb, chopped
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×9 inch baking pan generously.
  2. Combine 1 cup of all-purpose flour, 1/2 cup of sugar, and softened butter in a mixing bowl and mix until it resembles coarse crumbs. Press into the bottom of the prepared pan.
  3. Beat together 1/2 cup of cream cheese, 1/2 cup of sugar, 1 egg, and 1 teaspoon of vanilla extract until smooth. Spread evenly over the crust.
  4. Toss 2 cups of chopped rhubarb with 1 tablespoon of cornstarch and 1/2 teaspoon of cinnamon. Pour the mixture over the cream cheese layer.
  5. Bake for 30-35 minutes or until the center is set and edges are golden brown.
  6. Cool completely in the pan, then slice into squares and dust with powdered sugar if desired.

Notes

These bars can be made ahead and stored in the fridge for up to five days. They are also freezable for up to three months.
