- 2 large sweet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground cinnamon (optional)
- 2 tablespoons honey
- 1/3 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel the sweet potatoes and slice them into 1/2-inch thick rounds.
- Arrange the sweet potato rounds on the baking sheet in a single layer.
- Drizzle the rounds with olive oil and sprinkle with salt, pepper, and cinnamon (if using). Toss gently to coat.
- Roast for 20-25 minutes, flipping halfway through until golden and tender.
- Transfer the sweet potato rounds to a serving platter while warm.
- Drizzle honey over the top and sprinkle with feta cheese and parsley. Serve immediately.
