Description

Delicious roasted sweet potato rounds drizzled with honey and topped with feta cheese, perfect for any occasion.


Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cinnamon (optional)
  • 2 tablespoons honey
  • 1/3 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into 1/2-inch thick rounds.
  3. Arrange the sweet potato rounds on the baking sheet in a single layer.
  4. Drizzle the rounds with olive oil and sprinkle with salt, pepper, and cinnamon (if using). Toss gently to coat.
  5. Roast for 20-25 minutes, flipping halfway through until golden and tender.
  6. Transfer the sweet potato rounds to a serving platter while warm.
  7. Drizzle honey over the top and sprinkle with feta cheese and parsley. Serve immediately.
