Description

A comforting casserole featuring kielbasa sausage, fresh green beans, and tender potatoes, all infused with savory chicken broth.


Ingredients

  • 1 pound kielbasa sausage, sliced
  • 4 cups fresh green beans, trimmed
  • 4 cups potatoes, diced
  • 1 onion, chopped
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the sliced kielbasa and cook until browned, about 5-7 minutes.
  4. Layer the diced potatoes and prepared green beans in a large casserole dish. Set the browned sausage mixture atop the vegetables.
  5. Pour chicken broth over the mixture. Season with garlic powder, salt, and pepper.
  6. Cover the dish with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes until golden brown.

Notes

For added creaminess, you can layer in cream cheese before baking. Leftovers can be stored in the fridge for up to 3-4 days, or frozen for up to 2 months.
