Instructions
- Bring the steak to room temperature for about 30 minutes.

- Flip the steak and add in the butter, minced garlic, and herbs, basting continuously.
- Check the steak’s temperature, aiming for medium-rare at 130°F.
- Let the steak rest for at least 5 minutes before serving.
- Make the cowboy butter by mixing the softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices.
- Slice the steak against the grain and serve topped with cowboy butter.
