Description

A flavorful Cowboy Butter Steak recipe with garlic, herbs, and a hint of citrus, promising a culinary adventure.


Ingredients

  • 1 stick of unsalted butter, mostly melted
  • 4 cloves of garlic, minced
  • 1/2 lemon for zest and 1 tablespoon of juice
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne or red pepper flakes
  • 1/2 teaspoon dried thyme
  • 1 tablespoon of chives or green onions, sliced
  • 2 tablespoons of fresh parsley, minced
  • Salt and pepper, adjusted to taste
  • Optional: rosemary sprig and smashed garlic for cast iron preparation

Instructions

  1. Bring the steak to room temperature for about 30 minutes.
  2. Season the steak generously with salt, pepper, and minced garlic.
  3. Heat a cast iron skillet on high heat until smoking hot.
  4. Sizzle the steak in the skillet with a drizzle of avocado oil.
  5. Flip the steak and add in the butter, minced garlic, and herbs, basting continuously.
  6. Check the steak’s temperature, aiming for medium-rare at 130°F.
  7. Let the steak rest for at least 5 minutes before serving.
  8. Make the cowboy butter by mixing the softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices.
  9. Slice the steak against the grain and serve topped with cowboy butter.

Notes

Make-ahead cowboy butter can be stored for a week. Avoid common mistakes like skipping resting time or cooking from the fridge.
