Description

Smashed Carrots are roasted to perfection, combining natural sweetness with a delightful crunch, perfect for any meal.


Ingredients

  • 2 pounds carrots, peeled and chopped into large chunks
  • 3 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • Fresh herbs (optional, such as thyme or parsley)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the carrots in salted water for about 10-15 minutes, or until tender.
  3. Drain the carrots and place them on a baking sheet lined with parchment paper.
  4. Smash the carrots gently with a fork or potato masher until craggy.
  5. Drizzle with olive oil and honey (or maple syrup), then sprinkle with garlic powder, salt, and pepper.
  6. Roast in the oven for 20-25 minutes until golden and crispy.
  7. Optional: Sprinkle with fresh herbs before serving.

Notes
