- 2 pounds carrots, peeled and chopped into large chunks
- 3 tablespoons olive oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- Fresh herbs (optional, such as thyme or parsley)
Instructions
- Preheat your oven to 400°F (200°C).
- Boil the carrots in salted water for about 10-15 minutes, or until tender.
- Drain the carrots and place them on a baking sheet lined with parchment paper.
- Smash the carrots gently with a fork or potato masher until craggy.
- Drizzle with olive oil and honey (or maple syrup), then sprinkle with garlic powder, salt, and pepper.
- Roast in the oven for 20-25 minutes until golden and crispy.
- Optional: Sprinkle with fresh herbs before serving.
