Description

A vibrant wrap filled with juicy chicken, zesty lime, smoky chipotle, crisp vegetables, and creamy cotija cheese, perfect for any occasion.


Ingredients

  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper
  • 1 jalapeño
  • 1 cup black beans (drained and rinsed)
  • ¾ cup corn kernels
  • ¼ cup cotija cheese

Instructions

  1. Marinate the Chicken: Dice chicken breast and mix with olive oil, lime juice, chili powder, and chipotle pepper. Marinate for at least 15 minutes.
  2. Cook the Rice: Prepare rice according to package instructions.
  3. Sauté the Chicken: Heat olive oil in a skillet, add marinated chicken, and cook for 12–15 minutes until done.
  4. Sauté the Vegetables: Move chicken to one side, add red bell pepper and jalapeño, sauté for 5 minutes, then add garlic for the last minute.
  5. Warm the Tortillas: Lightly warm tortillas for easier rolling.
  6. Assemble the Wraps: Fill each tortilla with rice, chicken mixture, black beans, corn, and cotija cheese.
  7. Roll and Serve: Roll up tortillas tightly and enjoy!
