- 0.75 lb boneless, skinless chicken breasts
- ¼ cup lime juice
- ½ tsp chili powder
- 1 Tbsp chipotle pepper in adobo
- 4 large tortillas
- 1 cup uncooked rice
- 1 small red bell pepper
- 1 jalapeño
- 1 cup black beans (drained and rinsed)
- ¾ cup corn kernels
- ¼ cup cotija cheese
Instructions
- Marinate the Chicken: Dice chicken breast and mix with olive oil, lime juice, chili powder, and chipotle pepper. Marinate for at least 15 minutes.
- Cook the Rice: Prepare rice according to package instructions.
- Sauté the Chicken: Heat olive oil in a skillet, add marinated chicken, and cook for 12–15 minutes until done.
- Sauté the Vegetables: Move chicken to one side, add red bell pepper and jalapeño, sauté for 5 minutes, then add garlic for the last minute.
- Warm the Tortillas: Lightly warm tortillas for easier rolling.
- Assemble the Wraps: Fill each tortilla with rice, chicken mixture, black beans, corn, and cotija cheese.
