Description

A delightful blend of flavors featuring seared chicken thighs, jasmine rice, and a creamy coconut lime drizzle, perfect for family dinners or casual gatherings.


Ingredients

  • 1 lb chicken thighs (boneless and skinless)
  • ½ cup sweet chili sauce
  • ¼ cup soy sauce
  • 2 tbsp olive oil
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 2 tbsp fresh lime juice
  • 1 cup diced fresh tomatoes
  • 2 tbsp chopped green onions
  • Salt and pepper to taste
  • Optional sesame seeds
  • Optional lime wedges

Instructions

  1. Cook the rice or quinoa according to the package directions and set aside.
  2. In a large skillet, heat olive oil over medium heat until shimmering.
  3. Add chicken thighs to the skillet, searing each side for about 5-7 minutes until golden-brown and cooked through.
  4. Whisk together sweet chili sauce, soy sauce, and fresh lime juice in a bowl, then pour over the chicken during the last 2-3 minutes of cooking.
  5. Remove the chicken from the skillet, rest for a few minutes, then slice.
  6. Assemble bowls by dividing warm rice or quinoa, topped with sliced chicken, diced tomatoes, and green onions.
  7. Drizzle coconut milk over each bowl and garnish with optional sesame seeds and lime wedges.

Notes
