Description

A vibrant dish celebrating seasonal vegetables and creamy whipped feta, perfect for gatherings or cozy dinners.


Ingredients

  • Assorted Seasonal Vegetables (bell peppers, zucchini, eggplant, etc.)
  • Feta Cheese
  • Fresh Herbs (basil, parsley, thyme)
  • Olive Oil
  • Spices (salt, pepper, paprika, garlic powder)

Instructions

  1. Preheat the oven to 400°F.
  2. Chop the assorted veggies into bite-sized pieces.
  3. Toss the chopped veggies with olive oil, salt, pepper, and spices in a large mixing bowl.
  4. Spread the veggies on a baking sheet and roast for 20-25 minutes, stirring halfway through.
  5. In a food processor, blend the feta cheese, olive oil, and fresh herbs until creamy.
  6. Arrange the roasted vegetables on a platter, dollop the whipped feta on top, and garnish with fresh herbs.
