- 8 oz high-quality dark chocolate
- 1 cup heavy cream
- 4 large eggs, separated
- 1/4 cup granulated sugar
- 1 tsp vanilla extract (optional)
Instructions
- Melt the chocolate in a heatproof bowl over simmering water, stirring until smooth. Set aside to cool slightly.
- Whip the cream in a separate bowl until soft peaks form.
- Beat the egg whites in another bowl until stiff peaks form.
- Combine the melted chocolate with the whipped cream gently.
- Add the beaten egg whites carefully until just incorporated.
- Chill in individual cups for at least one hour before serving.
Notes
For a vegan version, use dairy-free chocolate and aquafaba as an egg substitute.
