Description

A refreshing salad featuring vibrant arugula, creamy avocado, and citrus segments, drizzled with a zesty lemon vinaigrette.

Ingredients

Scale
  • 4 cups arugula
  • 1 avocado, sliced
  • 1 cup citrus segments (oranges, grapefruits, or tangerines)
  • 1/4 red onion, thinly sliced
  • 1/4 cup nuts (walnuts or almonds), toasted
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey (optional)

Instructions

  1. In a large bowl, combine the arugula, sliced avocado, citrus segments, and thinly sliced red onion. Gently toss to distribute the ingredients evenly.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey (if using), salt, and pepper.
  3. Drizzle the vinaigrette over the salad and toss gently to combine.
  4. Top with toasted nuts before serving.

Notes

Use a ripe avocado for the best creaminess. Toast the nuts to enhance their flavor and avoid mixing the salad until just before serving for optimal freshness.
