- 4 slices of sourdough or whole grain bread
- 1 ripe avocado, sliced or mashed
- 1 fresh tomato, sliced
- 8 ounces fresh mozzarella cheese
- 2 tablespoons butter or olive oil
- Salt and pepper to taste
- Optional: fresh basil leaves, balsamic glaze
Instructions
- Butter one side of each slice of bread generously or brush lightly with olive oil.
- Lay one slice of bread down, unbuttered side facing up, and spread a layer of ripe avocado evenly.
- Place mozzarella cheese on top of the avocado, followed by a careful arrangement of tomato slices.
- Season the layers lightly with salt and pepper. Optionally, sprinkle fresh basil leaves or drizzle with balsamic glaze.
- Cap it off with the second slice of bread, ensuring the buttered side is facing outward.
- Heat your skillet over medium heat and place the sandwich in, allowing it to grill beautifully.
- Grill for about 3-4 minutes on each side, using a spatula to press down gently.
- Remove from heat, let it rest briefly, slice, and indulge.
