Description

A creamy and savory avocado and smoked salmon omelet that’s perfect for breakfast, brunch, or a light lunch.


Ingredients

  • 2 large eggs
  • 1/2 ripe avocado, sliced
  • 2 oz smoked salmon
  • 1 tablespoon fresh herbs (such as chives or dill), chopped
  • Salt and pepper to taste
  • Butter or olive oil for cooking

Instructions

  1. Whisk together the eggs with a pinch of salt and pepper until frothy.
  2. Heat a non-stick skillet over medium heat and add butter or olive oil.
  3. Pour the egg mixture into the skillet, tilting gently to cover the surface.
  4. Cook until the edges set, about 2-3 minutes.
  5. Lift the edges of the omelet with a spatula, allowing uncooked egg to flow underneath.
  6. Position slices of avocado and smoked salmon on one half of the omelet.
  7. Sprinkle fresh herbs over the filling.
  8. Carefully fold the omelet over the filling and cook for another minute.
  9. Slide the omelet onto a plate, sprinkle with additional herbs if desired, and serve warm.
