- 1 pound ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon taco seasoning
- 8–10 small corn or flour tortillas
- Cooking spray
- Salsa and sour cream (for serving)
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the ground beef in a skillet over medium heat until browned, about 6-8 minutes. Drain excess fat.
- Stir in the taco seasoning and ½ cup of cheese until melted.
- Warm the tortillas in the microwave for 30 seconds to make them pliable.
- Place a spoonful of beef mixture on each tortilla and sprinkle extra cheese on top.
- Roll tightly and place seam-side down on a prepared baking sheet.
- Spray the tops lightly with cooking spray.
- Bake for 15-20 minutes until golden brown and crispy.
- Serve with salsa and sour cream.
Notes
You can prepare the beef mixture in advance and roll the taquitos a day before baking for convenience.
