Description

Crispy baked taquitos filled with savory spiced beef and cheese, perfect for snacking or gatherings.


Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon taco seasoning
  • 810 small corn or flour tortillas
  • Cooking spray
  • Salsa and sour cream (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the ground beef in a skillet over medium heat until browned, about 6-8 minutes. Drain excess fat.
  3. Stir in the taco seasoning and ½ cup of cheese until melted.
  4. Warm the tortillas in the microwave for 30 seconds to make them pliable.
  5. Place a spoonful of beef mixture on each tortilla and sprinkle extra cheese on top.
  6. Roll tightly and place seam-side down on a prepared baking sheet.
  7. Spray the tops lightly with cooking spray.
  8. Bake for 15-20 minutes until golden brown and crispy.
  9. Serve with salsa and sour cream.

Notes

You can prepare the beef mixture in advance and roll the taquitos a day before baking for convenience.
