- 10 small corn tortillas
- 1 pound ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced onion
- 1 packet taco seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent.
- Add ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Stir in taco seasoning and follow packet instructions. Add water if necessary.
- Remove from heat and mix in shredded cheese until melted.
- Place spoonfuls of the beef mixture on each tortilla and roll tightly, seam side down.
- Spray with cooking spray and arrange on a baking sheet.
- Bake for 15-20 minutes or until golden brown and crisp.
- Serve warm with salsa or guacamole.
