Description

Delicious and crispy baked beef taquitos filled with seasoned ground beef, cheese, and spices. Perfect for gatherings or a cozy meal.

Ingredients

Scale
  • 10 small corn tortillas
  • 1 pound ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onion
  • 1 packet taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent.
  3. Add ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
  4. Stir in taco seasoning and follow packet instructions. Add water if necessary.
  5. Remove from heat and mix in shredded cheese until melted.
  6. Place spoonfuls of the beef mixture on each tortilla and roll tightly, seam side down.
  7. Spray with cooking spray and arrange on a baking sheet.
  8. Bake for 15-20 minutes or until golden brown and crisp.
  9. Serve warm with salsa or guacamole.

Notes

For a dairy-free option, substitute with vegan cheese. Make-ahead tips: Prepare the beef filling in advance, assemble, and bake just before serving for maximum crispness.
