Description

A refreshing BBQ Chicken Salad featuring grilled chicken, vibrant vegetables, and a creamy avocado dressing, perfect for summer gatherings or light meals.


Ingredients

  • 2 Grilled Chicken Breasts
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Corn, fresh or canned
  • 1 can Black Beans, drained
  • 1 Avocado
  • 2 tablespoons Lime Juice
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Grill the chicken: Preheat your grill to medium-high. Season the chicken breasts lightly with salt and pepper, then grill for about 6-7 minutes on each side until fully cooked. Let them rest before slicing.
  2. Mix the salad ingredients: In a large bowl, combine sliced grilled chicken, halved cherry tomatoes, drained black beans, and corn. Gently mix.
  3. Craft the dressing: In a small bowl, mash the avocado until creamy. Add lime juice, olive oil, salt, and pepper, and mix until smooth.
