Ingredients

  • 1/2 cup pistachios, chopped
  • 1/2 cup dried blackcurrants
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper for easy release.
  2. Combine the rolled oats, chopped pistachios, and dried blackcurrants in a mixing bowl. Stir well to distribute the blackcurrants evenly.
  3. Mix the honey (or maple syrup), melted coconut oil, vanilla extract, and salt until combined into a smooth mixture in another bowl.
  4. Pour the wet mixture into the dry ingredients and mix thoroughly, ensuring every oat and nut is coated.
  5. Press the mixture firmly into the prepared baking dish, leveling it out with the back of a spatula for even baking.
  6. Bake for 20-25 minutes, or until the edges turn a lovely golden brown.
