Description

These breakfast cookies are a perfect blend of oats and nut butter, enriched with sweet chocolate chips or dried fruit for a quick and nutritious snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup nut butter (almond, peanut, or sunflower seed)
  • 1/4 cup honey or maple syrup
  • 1/2 banana, mashed
  • 1/2 cup chocolate chips or dried fruit
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the rolled oats, nut butter, honey (or maple syrup), and mashed banana in a large mixing bowl.
  3. Incorporate the chocolate chips (or dried fruit), vanilla extract, baking powder, and salt.
  4. Scoop tablespoon-sized portions onto the prepared baking sheet.
  5. Flatten each cookie gently with the back of a spoon.
  6. Bake for 10-12 minutes until edges are golden.
  7. Cool on the baking sheet before transferring to a wire rack.

Notes

Make-ahead: Prepare the dough the night before. Also, try using an air fryer for quicker baking.
