Description

Savory and juicy Korean BBQ Bulgogi beef burgers topped with creamy gochujang mayo for a delightful twist on the classic burger.


Ingredients

  • 1 pound (450g) ground beef (80/20 for best juiciness)
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger (optional)
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • 2 green onions, finely chopped
  • 1 teaspoon toasted sesame seeds (for garnish)
  • 1/4 cup (60ml) mayonnaise
  • 1 tablespoon gochujang paste
  • 1 teaspoon lime juice
  • 1/2 teaspoon honey
  • 4 burger buns (brioche or potato buns)
  • Leafy greens or shredded lettuce
  • Thinly sliced cucumber or pickled radish

Instructions

  1. Mix the Bulgogi marinade: In a large mixing bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, and black pepper. Whisk diligently until the sugar dissolves, about three minutes.
  2. Prepare the beef mixture: Add ground beef and finely chopped green onions to the marinade. Mix gently but thoroughly with your hands for about two to three minutes.
  3. Form patties: Divide the mixture into four portions, each about four ounces. Shape into round patties and press a slight indentation in the center.
  4. Make the gochujang mayo: In a small bowl, whisk together mayonnaise, gochujang paste, lime juice, and honey until smooth.
  5. Cook the patties: Heat your skillet or grill pan over medium-high heat. Cook patties for four to five minutes on one side, flip, and cook for three to four minutes more.
  6. Toast the buns: Lightly toast the buns face-down for one to two minutes until golden.
  7. Assemble the burgers: Spread gochujang mayo on the bottom bun, add the patty, top with leafy greens and a sprinkle of cucumber or radish. Cap with the top bun and sprinkle with sesame seeds.
  8. Serve immediately: Enjoy while hot fresh off the grill.
