Ingredients

- 1 head of cabbage, chopped
- 2 carrots, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: protein of choice (tofu, chicken, etc.)
Instructions
- Heat olive oil in a large pot or wok over medium heat.
- Add the sliced onion and minced garlic. Sauté until fragrant, about 2 minutes.
- Toss in the sliced carrots and bell pepper, cooking for another couple of minutes.
- Stir in the chopped cabbage until it wilts down.
- Pour in the soy sauce and season with salt and pepper.
- If using a protein, add it now and cook until heated through.
- Serve warm and enjoy!
Notes
Chop vegetables a day ahead and store in an airtight container for easier cooking. Feel free to customize with different vegetables and proteins.
