A soul-warming bowl of gumbo combining smoked Andouille sausage, tender chicken, and fresh vegetables, perfect for cozy gatherings.

- 1 lb chicken thighs (boneless and skinless)
- 8 oz Andouille sausage (sliced)
- 1 bell pepper (diced)
- 1 onion (diced)
- 2 celery stalks (diced)
- 4 cloves garlic (minced)
- 1 can (14.5 oz) diced tomatoes (undrained)
- 4 cups chicken broth
- 2 tbsp Cajun seasoning
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Cooked white rice
- Chopped green onions
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the sliced Andouille sausage and cook until browned.
- Add the chicken thighs to the pot and cook until lightly browned on all sides.
- Stir in the diced bell pepper, onion, celery, and garlic, cooking until softened.
- Add the diced tomatoes, chicken broth, Cajun seasoning, bay leaves, salt, and pepper. Stir together.
- Bring the mixture to a simmer and cook for 30-40 minutes until the chicken is tender.
- Remove bay leaves and shred the chicken into bite-sized pieces. Return to the pot.
- Serve over cooked white rice, garnished with chopped green onions.
Notes
Gumbo tastes better the next day! Consider using an Instant Pot for a quicker version.
