Description

A soul-warming bowl of gumbo combining smoked Andouille sausage, tender chicken, and fresh vegetables, perfect for cozy gatherings.


Ingredients

  • 1 lb chicken thighs (boneless and skinless)
  • 8 oz Andouille sausage (sliced)
  • 1 bell pepper (diced)
  • 1 onion (diced)
  • 2 celery stalks (diced)
  • 4 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes (undrained)
  • 4 cups chicken broth
  • 2 tbsp Cajun seasoning
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Cooked white rice
  • Chopped green onions

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the sliced Andouille sausage and cook until browned.
  3. Add the chicken thighs to the pot and cook until lightly browned on all sides.
  4. Stir in the diced bell pepper, onion, celery, and garlic, cooking until softened.
  5. Add the diced tomatoes, chicken broth, Cajun seasoning, bay leaves, salt, and pepper. Stir together.
  6. Bring the mixture to a simmer and cook for 30-40 minutes until the chicken is tender.
  7. Remove bay leaves and shred the chicken into bite-sized pieces. Return to the pot.
  8. Serve over cooked white rice, garnished with chopped green onions.

Notes

Gumbo tastes better the next day! Consider using an Instant Pot for a quicker version.
