Description

A zesty dish featuring Cajun spiced salmon served with creamy avocado and fresh toppings, perfect for a quick weeknight dinner or a gathering.


Ingredients

  • 4 fillets salmon (skin on or off based on preference)
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 ripe avocados
  • 1 cup sour cream or Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1/4 cup cilantro
  • 1 clove minced garlic
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons water
  • 2 cups rice (white, brown, or cauliflower)
  • 1 can black beans (optional)
  • 1 can corn (optional)
  • 1 cup chopped red onion
  • 1 cup diced tomatoes
  • 1 lime, cut into wedges
  • 8 corn or flour tortillas
  • 2 cups shredded lettuce

Instructions

  1. Prepare Your Rice: Cook the rice according to package instructions.
  2. Season the Salmon: Mix Cajun seasoning with olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper. Marinate salmon for at least 10 minutes.
  3. Cook the Salmon: Heat a skillet over medium-high heat, cook salmon for 4-5 minutes on each side until crispy.
  4. Prepare the Avocado Cream: Mash avocados and mix with sour cream, lime juice, garlic, cilantro, and cayenne. Adjust consistency with water if desired.
  5. Combine the Toppings: Mix red onion, tomatoes, corn, and black beans with salt and pepper.
  6. Assemble Your Dish: Place a tortilla on a plate, layer with rice, salmon, veggie mixture, avocado cream, and lettuce. Serve immediately.

Notes

Make the avocado cream a few hours in advance to improve flavor but keep it covered to prevent browning.
