- 2 ripe avocados
- 1 cup sour cream or Greek yogurt
- 2 tablespoons fresh lime juice
- 1/4 cup cilantro
- 1 clove minced garlic
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons water
- 2 cups rice (white, brown, or cauliflower)
- 1 can black beans (optional)
- 1 can corn (optional)
- 1 cup chopped red onion
- 1 cup diced tomatoes
- 1 lime, cut into wedges
- 8 corn or flour tortillas
- 2 cups shredded lettuce
Instructions
- Prepare Your Rice: Cook the rice according to package instructions.
- Season the Salmon: Mix Cajun seasoning with olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper. Marinate salmon for at least 10 minutes.
- Cook the Salmon: Heat a skillet over medium-high heat, cook salmon for 4-5 minutes on each side until crispy.
- Prepare the Avocado Cream: Mash avocados and mix with sour cream, lime juice, garlic, cilantro, and cayenne. Adjust consistency with water if desired.
- Combine the Toppings: Mix red onion, tomatoes, corn, and black beans with salt and pepper.
- Assemble Your Dish: Place a tortilla on a plate, layer with rice, salmon, veggie mixture, avocado cream, and lettuce. Serve immediately.
Notes
Make the avocado cream a few hours in advance to improve flavor but keep it covered to prevent browning.
