- 8 oz cheese tortellini
- 1 lb thinly sliced steak (ribeye or sirloin)
- 1 sweet onion, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup melting cheese (provolone or cheddar)
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the cheese tortellini in boiling salted water for 3-5 minutes until tender, then drain and set aside.
- Sauté the onion and bell pepper in olive oil over medium heat until softened, about 5 minutes.
- Push the veggies aside, then add the steak, searing until browned, about 3-4 minutes.
- Add the minced garlic and cook for another minute.
- Pour in the beef broth and let simmer for 3-4 minutes.
- Mix in the tortellini and cheese, stirring until melted and well combined.
- Season with salt and pepper to taste.
- Serve warm, enjoying the rich flavors.
Notes
