- 4 boneless, skinless chicken breasts
- 8 oz mushrooms, chopped
- 4 cloves garlic, minced
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 4 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Melt the butter in a skillet over medium heat.
- Add the garlic and sauté until fragrant, about 30 seconds.
- Stir in the chopped mushrooms and sauté until tender, about 5-7 minutes.
- Remove from heat and mix in mozzarella and Parmesan cheeses; season with salt and pepper.
- Slice a pocket into each chicken breast carefully.
- Stuff each breast with the mushroom and cheese mixture.
- Place stuffed chicken in a greased baking dish.
- Bake for 25-30 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- Garnish with fresh parsley before serving.
Notes
Make-ahead tips: Prepare the stuffing in advance and refrigerate. You can also use an air fryer for a quicker cooking option.
