Description

A vibrant and delicious Chicken Stir Fried Rice recipe, perfect for quick weeknight dinners.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Green onions for garnish

Instructions

  1. Heat the oil in a skillet or wok over medium heat.
  2. Sauté the garlic for about a minute.
  3. Scramble the eggs in the pan for about 2 minutes.
  4. Combine the chicken and mixed vegetables until warmed through.
  5. Incorporate the rice and drizzle soy sauce, mixing well.
  6. Season with salt and pepper to taste.
  7. Finish by cooking for an additional couple of minutes.
  8. Serve warm and garnish with green onions.

Notes

For best results, use day-old rice to prevent clumping. Customize with additional vegetables or proteins as desired.
