- 2 cups cooked rice (preferably day-old)
- 1 cup cooked chicken, diced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 eggs, beaten
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Green onions for garnish
Instructions
- Heat the oil in a skillet or wok over medium heat.
- Sauté the garlic for about a minute.
- Scramble the eggs in the pan for about 2 minutes.
- Combine the chicken and mixed vegetables until warmed through.
- Incorporate the rice and drizzle soy sauce, mixing well.
- Season with salt and pepper to taste.
- Finish by cooking for an additional couple of minutes.
- Serve warm and garnish with green onions.
Notes
