Description

A vibrant, creamy salad where chickpeas and tuna blend harmoniously with fresh vegetables and a zesty dressing.


Ingredients

  • 1 can of tuna, drained
  • 1 can of chickpeas, rinsed and drained
  • 1/4 cup red onion, diced
  • 1/4 cup bell pepper, diced
  • 1/4 cup celery, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Begin by placing the drained tuna and rinsed chickpeas into a large mixing bowl. Break apart the tuna with a fork, creating a lovely blend of flakiness.
  2. Dice your red onion, bell pepper, and celery, then add them to the bowl.
  3. Drizzle in the olive oil and the fresh lemon juice.
  4. Season generously with salt and pepper, mixing until all ingredients are combined thoroughly.
  5. If desired, finish with a sprinkle of freshly chopped parsley. Serve chilled or at room temperature.
