Description

A spicy and savory breakfast sandwich featuring fluffy scrambled eggs, chipotle aioli, smoky sausage, and melted cheddar cheese on toasted brioche.


Ingredients

  • 1/2 cup mayonnaise
  • 12 chipotle peppers in adobo sauce, minced (plus 1 tsp of the sauce)
  • 1 tsp lime juice
  • 1/4 tsp garlic powder
  • 2 brioche buns, split
  • 2 sausage patties
  • 4 large eggs
  • 2 tbsp milk
  • 2 slices cheddar cheese
  • 1 tbsp butter
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Prepare the Chipotle Aioli: In a small bowl, combine the mayonnaise, minced chipotle peppers, adobo sauce, lime juice, and garlic powder. Whisk until smooth and set aside.
  2. Cook the Sausages: Place a skillet over medium-high heat and cook the sausage patties for 3-4 minutes per side until browned. Transfer and keep warm.
  3. Toast the Buns: Lower the heat to medium, spread butter on the cut sides of the brioche buns, and toast for 1-2 minutes until golden brown. Set aside.
  4. Scramble the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Melt remaining butter in the skillet, pour in the egg mixture, and cook gently until soft and fluffy.
  5. Assemble the Sandwich: Spread chipotle aioli on both halves of the toasted buns, layer one sausage patty, half of the scrambled eggs, and a slice of cheddar cheese. Top with the other bun and enjoy.

Notes

For a lighter version, substitute mayonnaise with Greek yogurt. Customize with additional ingredients like avocado or spinach.
