A spicy and savory breakfast sandwich featuring fluffy scrambled eggs, chipotle aioli, smoky sausage, and melted cheddar cheese on toasted brioche.

- 1/2 cup mayonnaise
- 1–2 chipotle peppers in adobo sauce, minced (plus 1 tsp of the sauce)
- 1 tsp lime juice
- 1/4 tsp garlic powder
- 2 brioche buns, split
- 2 sausage patties
- 4 large eggs
- 2 tbsp milk
- 2 slices cheddar cheese
- 1 tbsp butter
- Salt and freshly ground black pepper (to taste)
Instructions
- Prepare the Chipotle Aioli: In a small bowl, combine the mayonnaise, minced chipotle peppers, adobo sauce, lime juice, and garlic powder. Whisk until smooth and set aside.
- Cook the Sausages: Place a skillet over medium-high heat and cook the sausage patties for 3-4 minutes per side until browned. Transfer and keep warm.
- Toast the Buns: Lower the heat to medium, spread butter on the cut sides of the brioche buns, and toast for 1-2 minutes until golden brown. Set aside.
- Scramble the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Melt remaining butter in the skillet, pour in the egg mixture, and cook gently until soft and fluffy.
- Assemble the Sandwich: Spread chipotle aioli on both halves of the toasted buns, layer one sausage patty, half of the scrambled eggs, and a slice of cheddar cheese. Top with the other bun and enjoy.
Notes
For a lighter version, substitute mayonnaise with Greek yogurt. Customize with additional ingredients like avocado or spinach.
