Description

A luxurious dessert featuring rich chocolate mousse combined with fresh raspberries, creating a perfect balance of flavor and texture.


Ingredients

Scale
  • 200g dark chocolate (70% cocoa)
  • 3 eggs
  • 100g granulated sugar
  • 200ml heavy cream
  • 250g fresh raspberries
  • 1 tablespoon gelatin
  • 1 tablespoon water
  • For the glaze: 100g dark chocolate
  • 100ml cream

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water until smooth.
  2. Separate the eggs, placing yolks in one bowl and whites in another.
  3. Whisk the yolks with sugar until light and creamy.
  4. Combine the melted chocolate with the egg yolk mixture.
  5. Whip the egg whites until stiff peaks form.
  6. Fold the whipped egg whites into the chocolate mixture.
  7. Whip the heavy cream until it reaches soft peaks and fold into the mixture.
  8. Prepare raspberry puree and mix with bloomed gelatin.
  9. Layer the mousse into a springform tin, alternating layers with fresh raspberries.
  10. Chill in the refrigerator for at least 4 hours or overnight.
  11. Melt chocolate and cream for the glaze, then pour over the set mousse.
  12. Set the glaze in the fridge for 30 minutes before removing the springform.

Notes

Make-ahead tips: Prepare the mousse a day or two in advance for better flavor melding. Can be customized with different fruits or cookie layers.
