- 200g dark chocolate (70% cocoa)
- 3 eggs
- 100g granulated sugar
- 200ml heavy cream
- 250g fresh raspberries
- 1 tablespoon gelatin
- 1 tablespoon water
- For the glaze: 100g dark chocolate
- 100ml cream
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water until smooth.
- Separate the eggs, placing yolks in one bowl and whites in another.
- Whisk the yolks with sugar until light and creamy.
- Combine the melted chocolate with the egg yolk mixture.
- Whip the egg whites until stiff peaks form.
- Fold the whipped egg whites into the chocolate mixture.
- Whip the heavy cream until it reaches soft peaks and fold into the mixture.
- Prepare raspberry puree and mix with bloomed gelatin.
- Layer the mousse into a springform tin, alternating layers with fresh raspberries.
- Chill in the refrigerator for at least 4 hours or overnight.
- Melt chocolate and cream for the glaze, then pour over the set mousse.
- Set the glaze in the fridge for 30 minutes before removing the springform.
Notes
Make-ahead tips: Prepare the mousse a day or two in advance for better flavor melding. Can be customized with different fruits or cookie layers.
