- 2 cups cooked chicken, shredded
- 1 cup cream cheese, softened
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- Salt and pepper to taste
- 10–12 small corn or flour tortillas
- Oil for frying or cooking spray for baking
Instructions
- Combine the shredded chicken, softened cream cheese, shredded cheese, garlic powder, onion powder, cumin, and a pinch of salt and pepper in a mixing bowl.
- Preheat your oven to 400°F (200°C) if baking, or heat oil in a skillet over medium-high heat if frying.
- Place about two tablespoons of the chicken mixture in the center of each tortilla, roll tightly, and lay them seam-side down on a baking sheet or platter.
- Lightly spray the taquitos with cooking spray for the oven method and arrange on a baking sheet. Bake for 15-20 minutes until golden and crispy.
- If frying, carefully place a few taquitos in the hot oil and fry each for 3-4 minutes per side until golden and crispy.
- Remove from heat and serve hot with salsa, guacamole, or sour cream.
